TimesUnion.com – The new Fish & Game in Hudson is an extraordinary restaurant, and although it’s only been open since May 15, the culinary vision is vividly clear and well realized.

Chef Zakary Pelaccio and his wife and co-chef, Jori Jayne Emde, use locally produced and foraged ingredients for the majority of their dishes. The flavors are simple, direct, delicious, and the presentation is unfussy. The remarkable salad we had as the final savory course of Thursday night’s dinner, for example, featured about a dozen different greens, including the bright snap of wild mint from the couple’s Old Chatham farm, and a revelatory vinaigrette with fish sauce Emde made from local shad.
